Mojo picón (garlic sauce)

Ingredients
- 1 bulb of garlic
- 2 pimientas piconas
- ½ coffee cup vinegar
- 1 teaspoon paprika
- Oil
- Cumin seeds
- cooking salt
Preparation
Using a mortar, crush the garlic, the pimientas, the cumin seeds, the paprika and the cooking salt.
Finally, add gradually oil and vinegar, without stopping crushing. You can add any other pepper, if you like spicy tastes.
The pimientas palmeras are the best for preparing this sauce. This sauce goes well with either grilled or roasted meat.
