Mussels from Santander

Ingredients
Serves 4 people
- 2 kg. mussels
- 600 gr. Tomato
- 3 garlic cloves
- 1 medium-sized onion
- 1 tablespoon breadcrumbs
- Parsley
- ½ cup dry sherry
- 3 tablespoons olive oil
- Salt
Preparation
Wash the mussels with cold water, scrape the shells with a small knife and remove any beard they have.
It is advisable to throw away any opened mussels, since they may not be fresh.
Cover the bottom of an earthenware pot with oil and put it on the heat.
When the oil is hot, sauté the onion on a low heat until it becomes transparent.
Add the peeled and chopped tomatoes and simmer little by little, for 15 or 20 minutes.
Next, put the drained mussels into the pot and mix everything together with a wooden spoon to get it well done.
In a mortar, crush the peeled garlic cloves, the parsley and the salt. Add the mixture to the mussels as well as the wine and the breadcrumbs. Cover the pot and simmer the mixture on the heat until the mussels open -15 minutes more or less. Remove the empty shells.
Finally, place the mussels on a serving dish and cover them with prepared sauce and serve them immediately.
